300g Graham Crackers

105g Brown Sugar

180g Butter

680g Cream Cheese

85g Sugar

30g Powdered Sugar

20g Sweetened Condensed Milk

60g Sour Cream

10ml Vanilla Extract

10ml Lime Juice

250ml Whipping Cream


Step 1 - Make Crust

  1. Crush graham crackers to fine crumbs.
  2. Mix in the brown sugar.
  3. Add butter.
  4. It should look like wet sand.

Step 2 - Prepare Mold

  1. Put the mix in a 9-inch springform mold.
  2. Press hard to fit the mold.
  3. Put in the fridge for 45 minutes.

Step 3 - Make Filling

  1. In stand mixer, mix room-temp cream cheese until soft.
  2. Add sugars, mix 2 minutes.
  3. Add vanilla, lime juice, sour cream, and condensed milk.
  4. Mix for 3-5 minutes.
  5. Whip cream to firm peaks.
  6. Fold whipped cream into the cheese mix.

Step 4 - Assemble and Chill

  1. Pour filling into cold crust.
  2. Flatten the top.
  3. Cover, put in the fridge overnight.

Step 5 - Serve

  1. Take out of mold.
  2. Cut slices.
  3. Add toppings of  your choice. Enjoy!
