550ml (2 1/3 cups) Cream 35%

50g (1/4 cup) Sugar

1 Vanilla pod

5 Egg yolks

More sugar for the tops


French Crème Brûlée

  1. Heat cream and vanilla till almost simmering.
  2. Let it infuse for 10 minutes.
  3. Whisk yolks and sugar until sugar melts.
  4. Add vanilla cream to egg mix while stirring.
  5. Fill ramekins. Don't overfill.
  6. Place in water bath. Water halfway up ramekin.
  7. Bake 30-45 mins or until thicker.
  8. Check temp: 170F-175F is good.
  9. Cool down fully.
  10. Add thin sugar layer on top.
  11. Melt sugar with torch for hard caramel.
  12. Eat and enjoy!
