How to Make Authentic Nougat at Home

2x Egg Whites

Pinch of Cream of Tartar

270g + 30g Sugar

450g Honey

200g Almonds

80g Pistachios

3g Lemon zest

1 tsp Vanilla extract

Cornstarch for dusting


Step 1 - Preparation

  1. Roast almonds, pistachios at 350°F for 10 min. Set aside.
  2. Zest a lemon.
  3. Measure vanilla.
  4. Grease and line an 8-inch mold with parchment paper.

Step 2 - Meringue

  1. Put 270g sugar and honey in a saucepan.
  2. Stir and cook until 280°F.
  3. Stop stirring, keep cooking.
  4. In a mixer, put egg whites and cream of tartar.
  5. Start whisking, add 30g sugar.
  6. Meringue and sugar mix should be ready at the same time.
  7. Pour hot sugar into meringue slowly, along the side of the bowl.
  8. Keep whisking until meringue cools.
  9. Fold in almonds, pistachios, and other add-ins.
  10. Pour into mold.
  11. Flatten the top with cornstarch.
  12. Leave at room temp for 3 hours.

Step 3 - Cutting

  1. Remove torrone from mold.
  2. Use knife and cornstarch to cut it.
  3. Cut into bars or cubes.
  4. Enjoy!
