3g Baking Soda
1.5g Cinnamon Ground
225g Unsalted Butter, room temperature
225g Sugar
1 Egg
1 Egg Yolk
10ml Vanilla Extract
Topping
60g Sugar
2.5g Ground Cinnamon
Instructions
Step 1 - Make Topping
- Mix sugar and cinnamon. Put it aside.
Step 2 - Prepare Dough
- In a bowl, mix these dry ingredients: flour, cream of tartar, baking soda, salt, cinnamon.
- Use a stand mixer with a paddle. Mix soft butter and sugar.
- Add the egg, extra yolk, and cinnamon.
- Put in the dry mix in 3 parts. Mix a little.
- Finish mixing by hand.
