Ingredients

  • Vegan butter
  • Brown sugar
  • Gluten-free flour
  • Almond flour
  • Old-fashioned oats
  • Baking powder
  • Baking soda
  • Soy milk
  • Medjool dates
  • Water
  • Vanilla

Instructions

 Mixing fluffy vegan butter and brown sugar.

Prep the Dough

Whip the vegan butter and brown sugar. It should look fluffy. Add dry ingredients and milk, alternating between them.

Shape and Chill

Scoop 20g of dough onto a baking sheet. Put it in the fridge for 30 minutes.

Bake

Heat your oven to 350F. Bake cookies for 14-15 minutes.

Cool Down

Let the cookies cool. This makes them better for filling.

Make the Filling

Heat up dates and water in a pan. Crush until paste forms. Add vanilla last.

Assemble

Spread date filling on one cookie. Top it with another.

Hint: For the best texture, don't skip chilling the dough. This makes your cookies hold their shape.

Substitutions

To make it nut-free, use oat flour instead of almond flour.

Variations

Add chocolate chips or coconut flakes in the dough for extra flavor.

Equipment

A stand mixer helps mix the dough well. If you don't have one, use a hand mixer but mix longer.

Storage

Store in an airtight container. Freeze for up to 3 months.

Ingredients

115g (½ cup) Vegan butter

100g (½ cup) Brown sugar

160g (1 ⅓ cups) Gluten-Free flour

50g (½ cup) Almond Flour

120g (1 ½ cups) Old-fashioned oats

1 tsp (5g) Baking powder

1 tsp (5g) Baking soda

70ml (⅓ cup) Soy milk

275g (1 ½ cups) Medjool dates

150ml (⅔ cup) Water

5ml (1 tsp) Vanilla

Instructions

Cookie

  1. Mix butter and brown sugar until fluffy.
  2. Combine dry stuff.
  3. Add dry stuff and milk to mix. Start and end with dry stuff.
  4. Scoop 20g dough on baking sheet.
  5. Put in fridge for 30 mins.
  6. Bake at 350F for 14-15 mins.
  7. Cool down fully.

Date Filling

  1. Heat dates and water in a pan.
  2. Crush to make paste.
  3. Add vanilla.
  4. Cool down.
  5. Spread date paste on cookie. Put another cookie on top to make a sandwich.
