  • Sugar
  • Water
  • Cream cheese
  • Vanilla pod
  • Eggs
  • Egg yolk
  • Evaporated milk
  • Sweetened condensed milk

  1. Mix sugar and water in a saucepan and heat it up. Don't stir once it starts melting.
  2. Remove from heat and pour into mold.

Ingredients

150g Sugar

60ml Water

225g Cream Cheese

1 Vanilla Pod

5 Eggs

1 Egg Yolk

340g Evaporated Milk

400g Sweetened Condensed Milk

Pinch of Salt

Instructions

Caramel Making

  1. Combine water and sugar in a saucepan before turning on the heat.
  2. Heat on medium-high to melt the sugar.
  3. Do not stir once the heat is on.
  4. Use a utensil to move faster-cooking edges to the middle.
  5. Wait for caramel to turn deep amber.
  6. Remove from heat and pour into mold.
  7. Tilt pan to spread caramel evenly.

Custard Cake Preparation

  1. Beat cream cheese and vanilla seeds with a hand mixer until smooth.
  2. Add eggs and egg yolk one by one, mixing well between each.
  3. Pour in evaporated and sweetened condensed milk.
  4. Mix well.
  5. Strain the mixture and pour over hardened caramel in the mold.

Baking Steps

  1. Place the mold in a water bath.
  2. Bake at 350F for 40 minutes or until center jiggles.
  3. Let the cake cool completely and then refrigerate for 8 hours.

  1. Run a knife around the edges of the cake.
  2. Place a large plate over the mold.
  3. Flip the mold and plate.
