Ingredients

500g Puff Pastry

Egg wash

250g Pastry Cream

250g Whipping Cream

3g Gelatin

10ml Citrus Alcohol (Optional)

Instructions

  1. Roll out 400g of puff pastry to 5mm thickness.
  2. Cut a 25 x 25 cm square and shape with remaining pastry.
  3. Refrigerate for 60 minutes.

  2. Deflate if needed and bake for an additional 30 minutes.
  3. Allow to cool completely.

Diplomate Cream:

  1. Bloom the gelatin in water.
  2. Warm the pastry cream and add gelatin and alcohol.
  3. Fold in the whipped cream to soft peaks.

  1. Pipe in the diplomate cream.
