Preparing the Mold
- Place plastic film all over your 8inch square mold
- Grease it a little
- Set aside for later
Preparing the Marshmallow
- In a small saucepan, pour the water and vanilla extract
- Sprinkle the gelatin over and stir a little
- Let it sit for a couple of minutes
- Add the sugar and slowly start heating the mixture (do not boil)
- When the sugar and gelatin are melted set aside for about 5 more minutes
- Pour into the bowl of your stand mixer
- Add the Corn syrup and start whisking
- When your mixture has nice peaks, pour into your mold
- Flatten it up (as much as you can)
- Refrigerate for about 2h or until the marshmallow is set
