Instructions

Mixing crumble ingredients in a bowl.

Prep the Crumble

Mix oatmeal, brown sugar, flour, and melted butter in a bowl. Set it aside.

Two bowls, one with dry ingredients and another with whisked butter and sugar.

Start the Batter

Combine flour, baking powder, and cinnamon. In a separate bowl, whisk butter and sugar until fluffy.

Adding eggs into the fluffy butter and sugar mixture.

Add Eggs

Put in eggs one by one, mixing each time.

Combining wet and dry ingredients.

Combine

Add dry ingredients and milk to the wet mix. Start and end with the dry stuff.

Folding in apple cubes into the batter.

Fold in Apple

Add apple cubes and mix. Put the mix in muffin molds.

Bake

Top with crumble. Press it down. Bake for 20-25 minutes at 350°F.

Hint: Make sure your butter is at room temperature for easy mixing. Cold butter won't mix well.

Substitutions

For a dairy-free version, use almond milk and plant-based butter.

Variations

Swap apple for pear for a different flavor.

Ingredients

90g Oatmeal

65g Brown Sugar

35g Flour

80g Melted Butter

200g Flour

1 ½ tsp Baking Powder

2 tsp Cinnamon

110g Butter

100g Sugar

2 x Eggs

5ml Vanilla

120ml Milk

1 x Big Apple

Instructions

Step 1: Make Crumble

  1. Mix all stuff in a bowl.
  2. Put aside.

Step 2: Make Muffins

  1. Mix flour, baking powder, and cinnamon.
  2. Beat butter and sugar until fluffy.
  3. Add eggs one at a time. Mix each time.
  4. Add dry mix and milk, one after the other.
  5. Start and end with dry mix.
  6. Add apple cubes. Fold in.
  7. Put in muffin pan.
  8. Put crumble on top.
  9. Press down.
  10. Bake 20-25 min at 350°F.
